The cyclosporiasis outbreak linked to Taylor Farms’ iceberg lettuce in Michigan has highlighted the alarming reality that leafy greens are a major source of foodborne illness in the US. The latest numbers put the outbreak at over 7,100 cases, but this is not an isolated incident. Leafy greens have been implicated in numerous outbreaks in recent years, including multistate E. coli outbreaks tied to romaine and norovirus linked to an Illinois eatery.

At first glance, it may seem counterintuitive that a vegetable as seemingly innocuous as lettuce should be responsible for such widespread suffering. However, a closer examination reveals a complex interplay of factors that contribute to the proliferation of pathogens in leafy greens. One key factor is the sheer volume of lettuce consumed in the US – it’s the second-most-consumed vegetable after potatoes.

Americans’ love affair with salads has become a recipe for disaster when combined with our desire for convenience. Ready-to-eat salads and blends of spring mix are particularly problematic because they contain multiple types of leafy greens sourced from different farms and locations, creating an environment where contamination can spread quickly throughout the entire product.

The way lettuce is grown also plays a significant role in its susceptibility to contamination. Research has shown that irrigation with untreated surface water can introduce pathogens into the plant, while overhead spray irrigation systems exacerbate the problem. Upgrading to more efficient and sanitary irrigation systems would require costly upgrades and downtime – but it’s an investment worth making.

A fundamental flaw in our food system is the lack of a “kill step” for raw produce. Unlike other foods, leafy greens aren’t subjected to heating, pasteurization, or freezing before they hit the shelves. This allows pathogens to remain active and viable until they’re consumed – often with devastating consequences.

The texture of lettuce itself contributes significantly to its ability to spread disease. As Jeanne Marrazzo, CEO of the Infectious Diseases Society of America, notes, many lettuce types have crevices and folds that allow tiny pathogens to take hold. Even vigorous washing procedures can’t always remove these microbes, which cling tightly to leaves.

Cyclospora, the parasite responsible for the current outbreak, has thick outer walls making it highly resistant to most food sanitizers. In this context, expert advice from Amira Roess, an epidemiologist at George Mason University, takes on added importance: “If you don’t wash these products well, you’re going to end up ingesting whatever is on the lettuce.”

As the number of outbreaks linked to leafy greens continues to rise, it’s clear that our food system needs a fundamental overhaul. Rather than relying on Band-Aid solutions like enhanced washing procedures or stricter regulations, we need to address the root causes of contamination – from production to consumption.

Ultimately, this is not just about lettuce; it’s about confronting the trade-offs we make for convenience and cheapness. We prioritize the ease and affordability of ready-to-eat salads over the safety and well-being of our citizens. It’s time to rethink our relationship with food and acknowledge that sometimes, what seems like a bargain can be a false economy.

The US must get serious about protecting itself from the pathogens lurking in its lettuce, and this requires a fundamental shift in how we approach food production, processing, and consumption.
